Lomi Salmon

Lomi Salmon is a must have when you are having a party at our house. I know that some people are totally against this but I love to mix my lomi salmon with poi. Grandma hates it when I do that. There are many ways to make lomi salmon, the ones that I know of require soaking the salmon overnight. Here's a recipe from alohaworld.com. Grandma says this reciepe is very similar to hers except she dosen't measure anything out. This is a 2-day event so read the directions carefully before preparing.


DAY 1

Needed:
- 1 1/2 lb salmon fillets
- some Hawaiian salt

Procedure:
Lay salmon on bed of salt in glass dish, cover with more salt. Put in refrigerator overnight. Wash off salt & dice the salmon.

DAY2

Needed:
- 3 tomatoes
- 1 small onion
- 3/4 lime juice
- 1/8 tsp. Tabasco sauce
- 1 tsp. sugar
- 1 tsp. Pepper

Procedure:
Peel & dice tomatoes & onion. Mix with salmon & add other ingredients. Toss lightly.

Serve with poi, laulau and sweet potato.
